Huevos a la flamenca

Ingredients to make Huevos a la flamenca

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 red peppers, finely chopped
  • 2 garlic cloves, finely chopped
  • 250 gms tomatoes, grated finely
  • 2 boiled potatoes, large and diced
  • 1 tbsp paprika or chilli flakes
  • 2 Eggs
  • 8 - 10 slices of pork sausage (chorizo)
  • 8 - 10 slices ham ( Serrano ham)
  • 1/4 cup of shelled peas
  • Salt and pepper to taste

How to make Huevos a la flamenca

  1. Preheat oven to 200 degree centigrade. In a glass dish add in the diced potato along with some water, salt and oil. Let boil.
  2. In a frying pan, add in the oil, onion and peppers, Saute till soft. Add in the garlic and fry for a minute and a half.
  3. As soon as the garlic aroma rises (make sure its doesn't get burnt) add in the semi boiled potatoes and finely grated tomatoes.
  4. Add in the smoked paprika and fry this mixture called the 'sofrito' gently for 15 minutes. Add salt and pepper to taste. Transfer in an oven safe dish.
  5. Break 2 eggs on top, place slices of ham, slices of chorizo/pork and a handful of peas on top.
  6. Bake for 10 minutes or until the eggs are set but still runny.
