As the name says this Baby potato Biryani is a nice twist to regular vegetable biryani. Loaded with rustic earthy flavors and aromatic spices this dish is definetely worth a try.

Ingredients Serving: 4

  1. 2 cups : Basmati rice ( wash & Soak in water )
  2. 300 gm : Baby potatoes
  3. 1/3 cup : Brown onions
  4. 2 tbsp : Mint leaves chopped
  5. 2 tbsp : Coriander leaves chopped
  6. 2 tbsp : Roasted Cashews
  7. 1 tbsp : Green chillies finely chopped
  8. 2 tbsp : Ghee
  9. 2 tbsp : Oil
  10. 1 tsp. Shahi jeera
  11. 1 : Bay leaf
  12. 1 : star anise
  13. 1 : Big Cardamom
  14. 4 : Cloves
  15. An inch : Cinnamon stick
  16. Few saffron strands soaked in milk
  17. Salt to taste
  18. 1/2 cup : Yogurt
  19. 2 tbsp : Gram flour
  20. 1 tsp : coriander powder
  21. 1 tsp : cumin powder
  22. 1 tsp : Red chilli powder
  23. 1/2 tsp : Turmeric
  24. 1 tsp : Garam masala powder
  25. 2 tbsp : Biryani masala
  26. 1 tbsp : Ginger garlic paste
  27. 1/2 tsp : Sugar
  28. Salt to taste

Instructions

  1. MIX ALL THE INGREDIENTS FOR THE MARINADE
  2. ADD 1/2 TSP MINT & 1 TBSP CORIANDER
  3. ADD 300 GMS PAR BOILED BABY POTATOES, MIX AND MARINATE FOR 20 MINS
  4. COOK PRE-SOAKED BASMATI RICE UNTIL IT IS ALMOST DONE
  5. DRAIN & KEEP ASIDE
  6. IN 250 GMS HOT GHEE, ADD 2 TBSP CUMIN, 1 BAY LEAF, 1 STAR ANISE, 4 CLOVES & 1 CINNAMON STICK
  7. ADD 1 TBSP GREEN CHILLIES
  8. ADD THE MARINATED POTATOES, COOK FOR 7-8 MINS, ON MEDIUM HEAT TILL GOLDEN BROWN
  9. LAYER THE COOKED RICE OVER THE POTATOES
  10. SPRINKLE 1/3 CUP BROWN ONIONS OVER THE RICE
  11. SPRINKLE 1/2 TSP MINT, 1 TBSP CORIANDER & 2 TBSP ROASTED CASHEWS
  12. DRIZZLE 1/4 CUP SAFFRON SOAKED IN WARM MILK OVER THE RICE
  13. COVER, SEAL & COOK ON DUM FOR 10 -12 MINUTES ON SLOW HEAT
  14. SERVE HOT WITH RAITA & CHUTNEY
