A pumpkin sabzi cooked in mild spices

Ingredients Serving: 2

  1. Red pumpkin 250 gms Cut into squares
  2. 1 tbsp desiccated coconut roasted
  3. 1 tsp sesame seeds
  4. 2 tsp grounded powder
  5. 1 tsp goda masala
  6. 1 tsp jaggery powder
  7. Salt to taste
  8. Red chilli powder 1 tsp
  9. For tempering
  10. 1 tsp mustard seeds
  11. 1 tsp fenugreek seeds
  12. 1/2 tsp hing
  13. 1 spring curry leaves
  14. 1/2 tsp turmeric powder

Instructions

  1. Wash pumpkin and keep it in water.
  2. In a pan heat oil and add the tempering ingredients one by one.
  3. Add the pumpkin draining the water. Cook on low flame for 5 min.
  4. Add coconuts, sesame seeds, ground nut powder, salt, red chilli powder and jaggery.
  5. Mix well. Cook for 2 to 3 min more.
  6. Remove from flame. Garnish with coriander and serve.
