Adjarian Khachapuri (Georgian Cheese Bread)

Ingredients to make Adjarian Khachapuri (Georgian Cheese Bread)

  • 500 gms Plain flour(maida)
  • 1 tsp Fresh/ dry Yeast
  • 1 tsp Salt
  • ¼ tsp Sugar
  • 1 tbsp Butter(plus extra for topping)
  • 4 Eggs
  • 1/2 cup Cream
  • 1/2 cup Milk
  • 1 cup Mozarella Cheese, grated
  • 1 cup Feta Cheese, crumbled
  • 1/2 cup water
  • some chopped coriander for garnishing

How to make Adjarian Khachapuri (Georgian Cheese Bread)

  1. Combine the butter, water, Milk, cream and sugar in a small pan and heat till lukewarm.
  2. Add the yeast and wait for 10 minutes till frothy.
  3. Add in the flour and salt.
  4. Knead into a smooth dough.
  5. Transfer to an oiled bowl, cover and keep for an hour or till doubled in bulk.
  6. Deflate the dough and knead again for a few minutes till dough is smooth and elastic.
  7. Cut into four equal portions.
  8. Roll out dough into 7 inch circles.
  9. Combine the cheeses in a bowl, split into four equal parts.
  10. Spread out the cheese onto the circle, 1 inch away from the border and pinch both ends to form a boat-like shape.
  11. Leave to rise for an hour
  12. Preheat oven to 200 deg. C.
  13. Bake for 20 minutes, till very light golden.
  14. Open the oven door quickly and crack an egg in the middle of the boat shape. Continue to bake for 5 more minutes or till egg is set and bread is golden.
  15. Top with some extra butter and coriander leaves and serve hot.
