ABOUT Lauki Yakhni RECIPE

Kashmiri Lauki Yakhni is yummy and simple recipe where lauki or bottlegourd is cooked in yoghurt based sauce. This side-dish subtly spiced with fennel and dry ginger powder, the taste stir your senses and deliciousness lingers

Ingredients Serving: 4

  1. Bottle gourd/ Lauki slices, 12-15
  2. Curd/yogurt 1 cup
  3. Water 1/2 cup
  4. Cinnamon 1 inch stick
  5. Cloves 3-5
  6. Black cardamom, 2 [badi elaichi]
  7. Green chilies slit vertically, 2
  8. Asafoetida/ hing 1/4 teaspoon
  9. Fennel powder 1 teaspoon
  10. Dry ginger powder 1/2 teaspoon
  11. Mustard oil 1 tablespoon
  12. Ghee 1 tablespoon to shallow fry the bottle gourd slices
  13. Finely chopped coriander leaves for garnish
  14. Shahjeera, crushed 1/4 teaspoon for garnish

Instructions

  1. Whisk the curd with 1/4 cup water and keep aside
  2. Take remaining 1/4 cup water add fennel powder, dry ginger powder and hing. Keep it aside.
  3. Wash and peel the bottle gourd, slice into 1/3 " thick round pieces.
  4. Heat ghee in pan and shallow fry the bottle gourd slices till they become lightly browned and soft.
  5. Drain them on tissue paper and keep aside.
  6. Heat mustard oil in the same pan.
  7. Add cinnamon stick, cloves and cardamom.
  8. Saute them till they turn aromatic.
  9. Add water [from step 2] to the pan and cook it for a minute.
  10. Now add fried bottle gourd slices.
  11. Gradually add whisked curd.to the pan stirring continuously.
  12. Cook it on low flame for 2-3 minutes.
  13. Switch off the flame.
  14. Pour the preparation in serving bowl and sprinkle some crushed Shahijeera.
  15. Garnish with finely chopped coriander leaves and serve it as side dish with rice or flatbread.
