ABOUT Mushroom in pineapple green curry RECIPE

A delicious green curry prepared with fresh pineapple crush and later mushrooms are added to it. I also made veg. Thai fried rice with use of pineapple in it.

Ingredients Serving: 4

  1. 1 small bunch fresh coriander with stalks
  2. 1 small piece of galagal
  3. 1 small piece of fresh ginger
  4. 8 green chilies deseeded
  5. 10 Kafir lime leaves
  6. 4 Shallots
  7. 1 green lime zest and juice
  8. 1 tsp peppercorns
  9. 1 tbsp fish sauce
  10. 1 tsp cumin seeds
  11. 2-3 tbsp Olive oil
  12. Rock salt to taste
  13. THE ABOVE INGREDIENTS ARE FOR GREEN PASTE
  14. 1/2 fresh pineapple
  15. 400 gms mushrooms
  16. 400 ml coconut milk

Instructions

  1. Take all the green paste ingredients one by one in a mortal and pestle and pound into a fine paste.
  2. Now in a frying pan add oil and then add the paste, fry for a minute.
  3. In a chopper add the pineapple and Churn till they turn into a crush and mushy , add them to the frying pan and cook for about 3 minutes.
  4. Wash the mushrooms and then slit them in half, now add them to the frying pan, cook for 2 minutes
  5. After this add the coconut cream to the frying pan and adjust salt to your taste. Remember that the paste also has salt.
  6. While cutting the pineapple try to scoop the pineapple from the centre and keep the shell intact. Wash it and pat dry.
  7. In the pineapple shell add the Thai green curry and serve with rice
