Preheat the oven to 185° celsius.
Take a bowl, add in the sugar and butter together. Beat this using a hand mixer until it is fluffy. Then add in the egg and vanilla and beat it again. Next, add in the salt and flour together. Mix these ingredients well together.
Now move this dough onto a floured surface and form into a disk shape, then roll this until it is 1/4 inch thick.
Take a 2 inch fluted round cutter, cut out cookie shapes and transfer them to a the lined baking sheets with 2 inch apart space. Keep this aside for 30 minutes.
Next, take a 1 and 1/4 inch plain round cutter, then cut out the centers of the cookies and discard them.
Bake these cookies for 10-12 minutes until they turn light brown in colour.
Place a teaspoon of jam in the center of each cookie, spread it to 1/3 inch of edge, then top each of them with a cookie ring.
Serve warm for best taste.
