It is my own version and innovation ..It is a dietary diabetic Gluten free Aromatic.curry having made from fresh herbs like mint basil and cilantro .along with gudness of Mushrooms which are not only heart healthy but rich in antioxidants n phytochemicals which make our immune system strong...one can have this veggy with chappattis and rice..

Ingredients Serving: 4

  1. Mushrooms button 200g
  2. Onion medium -1
  3. Garlic peeled.-2
  4. Green Tomatoes.-2
  5. Coconut Milk -2Tsp
  6. Mint leaves -200g
  7. Coriander leaves 100g
  8. Green chillies 2
  9. Basil leaves 50g
  10. Salt as per taste
  11. Jeera 1tsp
  12. Red chilly powder 1 tsp
  13. Potatoes preboiled and mashed 2.
  14. Turmeric powder 1 tsp
  15. Sesame seeds for garnishing . 10g
  16. Garlic flakes unpeeled

Instructions

  1. For making Green Gravy
  2. In a mixer grinder ..Add basil..Mint ..coriander leaves green tomatoes green chillies ..garlic red chilly powder and salt .Grind it into a smooth paste
  3. Meanwhile wash medium sized button mushrooms n wipe it with a cloth
  4. Remove it's stalk and scoop out the pulp of mushroom from the stalk region
  5. Add preboiled and mashed potatoes in it as stuffing in each of the mushroom ..
  6. Bake them in the microwave for 6 minutes at 1000 watts under ordinary microwave mode..
  7. Our baked stuffed mushrooms are ready
  8. Heat oil in a wok..
  9. Add jeera and allow it to splutter
  10. Add chopped onion and salute for 3 minutes
  11. Add green paste and cook it for 3 minutes
  12. Add baked stuffed mushrooms ,Simmer it for 3 minutes in the gravy..
  13. Your delicious aromatic healthy dish is ready
  14. Garnish with sesame seeds and serve with chappati or rice..
  15. Happy eating .
