ABOUT Beans Foogath RECIPE

Beans foogath is a Goan recipe which is subtle and has the sweetness coming from the beans, onions and the coconut. It is a simple dish with mild flavors and can be srved with chapatis or rice.

Ingredients Serving: 2

  1. French beans 250 grams
  2. Grated fresh or dry coconut 1/2 cup
  3. Salt to taste
  4. Curry leaves a few
  5. Onion small 1 chopped
  6. Mustard seeds 1/2 teaspoon
  7. turmeric a pinch
  8. Dry mango powder 1/4 teaspoon
  9. Red chilli powder coarse 1/2 teaspoon

Instructions

  1. Wash the beans and remove side strings. Cut the beans diagonally or chop them into 1/2 inch pieces.
  2. Blanch the beans for 2 minutes in salt water. Make sure that the beans stay green. Wash them under cold water and keep aside.
  3. Heat oil in a pan. Splutter curry leaves and mustard seeds. Add onions and saute them till they turn slight golden in colour.
  4. Add the beans, all the spices, the grated coconut and stir fry properly for a minute or two.
  5. Garnish with a little grated coconut and serve as a side dish.
