ABOUT ACHARI PANEER AND BELL PEPPER PIE RECIPE

Ingredients Serving: 4

  1. FOR FILLING- 1/2 cup diced red peppers
  2. 1/4 cup diced yellow pepper
  3. 1/4 cup diced capsicum ( green pepper)
  4. 1 cup chopped into cubes cottage cheese
  5. 2 Pinches Salt
  6. 1/2 cup mozzarella
  7. 1/2 cup cheese-cheddar
  8. 1 teaspoon fennel seeds
  9. 1/4 teaspoon mustard seeds
  10. 1 teaspoon fenugreek seeds
  11. 1 teaspoon onion seeds
  12. 1/2 teaspoon cumin seeds
  13. 1/2 teaspoon powdered asafoetida
  14. 1 cup Sliced Onion
  15. 1/2 teaspoon powdered turmeric
  16. 1/2 teaspoon chilli powder
  17. 1/2 teaspoon salt
  18. 1 tsp refined flour
  19. 3 tablespoon chopped cilantro
  20. 1 tablespoon virgin olive oil
  21. For dough
  22. 1 cup all purpose flour
  23. 1 tsp Salt
  24. 1/2 cup diced frozen butter
  25. Chilled water as required

Instructions

  1. To make this yummy recipe, prepare the paneer filling first. Mix together fennel seeds, mustard seeds, fenugreek seeds, onion seeds, cumin seeds and asafoetida in a small bowl.
  2. Heat a little oil in a sauce pan and add the seeds mixture. When they crackle, add the sliced onion and saute till it turns translucent.
  3. Now, add cottage cheese (paneer), red pepper, yellow pepper, capsicum, turmeric powder, chili powder and stir for some time. Then sprinkle the all purpose flour and mix well.
  4. Add the chopped cilantro and salt, and bring the mixture to a boil. Take the pan off the flame and let it cool down to a warm consistency. Set aside to fill in pie.
  5. Now, add mozzarella, cheddar, and mix well.
  6. Now make a dough for the lattice pattern with all purpose flour, chilled and diced butter, a pinch of salt and cold water. Keep it aside.
  7. Roll out the dough, set in tart mould, remove the extra dough, prick with the fork. Bake at 180°C for ten minutes in preheated oven
  8. Now, ladle the filling into the pie crust and sprinkle the top with the remaining cheese,
  9. Place the pie back in the oven at 175 degree Celsius and cook till cheese melts to a golden brown on top.
  10. Remove the pie from the oven. Let it sit for 5 minutes, cut and serve it hot.
