ABOUT Aaradi RECIPE

A healthy sweet prepared as naivedhyam during festivals in Andhra Pradesh. Very easy to prepare and tasty too.

Ingredients Serving: 4

  1. Rice flour – 1 cup
  2. Grated coconut – 1 cup
  3. Soaked almonds – 1/2 cup
  4. Sugar – 2 cups
  5. Powdered cardamom – 1 teaspoon
  6. Powdered black pepper – 3 pinches
  7. Dry fruits – for garnishing
  8. Water – as required

Instructions

  1. Boil water in a pan over a medium flame.
  2. In the mean time prepare coconut milk by adding water to grated coconut in a mixie jar.
  3. Strain to get coconut milk. Keep aside.
  4. Peel the skin of the soaked almonds and make almond milk by adding water in a mixie jar. Keep aside.
  5. Add both the cups of milk (almond and coconut) to the boiling water.
  6. Add sugar stir it well , continue boiling for 2 to 3 minutes.
  7. Now take the rice flour into a shallow bowl and add little water slowly until a paste like consistency without lumps is obtained.
  8. Then pour water and make a thick, consistent batter, like dosa batter.
  9. Add this batter slowly to the above boiling mix (almond, coconut, sugar).Stir it well so as to get a soft and thickened Aaradi.
  10. Add cardamom and black pepper powder to it. Mix well in all the directions.
  11. Garnish with dry fruits and serve hot or cold.
