ABOUT Pesto pasta with black beans RECIPE

What happens when we mix these cuisines together? Magic? You are correct. This Pasta is not only amazing, but protein packed too. The combination of pasta and beans is terrific. The pesto is made using fresh basil from my garden. You can easily change up the flavors, like you can use cilantro instead of basil or even spinach, as per your preference and liking.

Ingredients Serving: 4

  1. For pesto: 1 cup Basil/Cilantro (I have made this Pasta dish with cilantro pesto )
  2. 1/2 cup olive oil
  3. 1/2 cup walnuts
  4. 1/2 tsp Salt
  5. 1/2 cup parmesan cheese , optional
  6. For the dish:
  7. 1 box of whole wheat pasta, boiled
  8. 1 can black beans /red beans
  9. 1/2 tsp cheyenne pepper
  10. 1/2 cup red bell pepper, chopped
  11. 1/2 green bell pepper, chopped
  12. 3-4 tbsp pesto (add more according to your taste)
  13. 1 tsp olive oil
  14. 2- 4 Tbsp water
  15. Lime
  16. Salt to taste

Instructions

  1. For the pesto: Put all ingredients in a food processor and blend it. Store in a glass container in the fridge. Enjoy it with sandwich & pasta.
  2. Cook pasta as directed on the box. When the pasta is ready, drain most of the liquid, leaving a little still in the bottom of the pot (about two or three tablespoons).
  3. Add olive oil in a pan on a medium heat.
  4. Then add in red and green bell pepper, black beans and cheyenne pepper, cook on a medium heat for 5 minutes.
  5. Add pesto and water. Mix well in pan until all the ingredients are nicely blended. Let it cook for about five more minutes.
  6. Add pasta to the beans mixture and mix well in pan. Then add salt to taste and squeeze in some lime juice to give that Zing!
