ABOUT Upside Down Potato Gratin RECIPE

Gratin dauphinois is a traditional regional French dish based on potatoes

Ingredients Serving: 4

  1. 4-5 potatoes
  2. 2 tbsp olive oil
  3. 1 large onion, chopped
  4. 2 garlic cloves chopped
  5. 1/4 cup vegetable stock
  6. Pinch of dried thyme
  7. 1 Tsp of oregano or Italian seasoning
  8. Salt to taste
  9. 1 green chilli chopped
  10. 3/4 cup mozerella and cheddar cheese grated
  11. 1/2 cup red, green and yellow bell pepper
  12. 1/2 cup carrot and French beans boiled
  13. 1/2 cup of tomato puree

Instructions

  1. SOAK 4-5 THINLY SLICED POTATOES IN WATER, SET ASIDE
  2. IN 2 TBSP HOT OLIVE OIL, SAUTE 2 GARLIC CLOVES
  3. ADD 1/2 CUP ONION
  4. ADD 1 GREEN CHILLI
  5. ADD 1/4 CUP TOMATO PUREE
  6. ADD SALT TO TASTE, 1/4 TSP RED CHILLI & A PINCH OF THYME
  7. ADD 1 TSP OREGANO
  8. ADD 1/2 CUP EACH OF BOILED FRENCH BEANS & CARROTS
  9. ADD 1/4 CUP EACH OF RED, GREEN & YELLOW BELL PEPPER
  10. ADD 1/4 CUP VEGETABLE STOCK
  11. COOK FOR 2 MINS, TAKE OFF HEAT
  12. PLACE BUTTER PAPER IN A GREASED BAKING PAN
  13. CUT THE SLICED POTATOES WITH A COOKIE CUTTER
  14. OVERLAP THEM IN A CIRCULAR MANNER AT THE BOTTOM AND ON THE SIDES OF THE PAN
  15. ADD A LAYER OF THE COOKED VEGETABLES
  16. PRESS IT LIGHTLY, SPRINKLE 1 TBSP EACH OF GRATED MOZERELLA & CHEDDAR CHEESE
  17. ARRANGE THE LEFTOVER TRIMS OF POTATOES, SPRINKLE SOME SALT & PEPPER TO TASTE
  18. ADD A SECOND LAYER OF THE VEGETABLES
  19. AND POTATO TRIMMINGS
  20. SPRINKLE 3-4 TBSP MOZERELLA & CHEDDAR CHEESE
  21. ARRANGE THE POTATO SLICES ON TOP
  22. BRUSH SOME OLIVE OIL
  23. COVER IT WITH BUTTER PAPER AND FOIL TO SEAL THE DISH
  24. BAKE THE POTATO GRATIN IN A PRE HEATED OVEN AT 18O DEGREES FOR 30 MINS
  25. REMOVE FOIL & PARCHMENT AND BAKE FOR ANOTHER 1O-15 MINS
  26. COOL & UNMOULD
  27. CUT SLICES & SERVE
