The combination of pork and potato is quite delicious and this dish packs alot of flavour as well.

Ingredients Serving: 4

  1. 500 gm pork belly (cut into cubes)
  2. 3 medium sized potatoes (cut into cubes)
  3. Marination Ingredients:
  4. 1/2 tsp tumeric powder
  5. 1 tsp red chili powder
  6. 4 tbsp meat curry powder
  7. 60 ml water
  8. 1and 1/2 tsp salt
  9. 1 sprig of curry leaves
  10. Other Ingredients:
  11. 1 medium sized onion, finely chopped
  12. 1 medium sized tomato, finely chopped
  13. 1 tbsp ginger-garlic paste
  14. 4 green cardamom pods
  15. 1 piece of cinnamon stick
  16. 4 cloves
  17. 2 star anise
  18. 3-4 tbsp oil
  19. Salt to taste

Instructions

  1. Wash the pork and mix it with turmeric powder, red chilli powder, meat powder, curry leaves, salt and a little water. Combine these ingredients well with the pork and marinate it for 30 minutes.
  2. Heat oil in a pan. Add the ginger-garlic paste and saute it on a low flame till the fragrance develops. Then add the cinnamon stick, cardamon pods, star anise and cloves, continue stirring till the fragrance envelops the room.
  3. Next, put in the marinated pork, saute and cook for about 5 minutes on a medium flame. You can drizzle some oil on top if the meat becomes dry.
  4. Now add in the chopped tomatoes, onions and salt, stir this for another 2 minutes. Pour in 1/2 cup of water, cover with a lid and let it simmer on a low flame and cook for 30 minutes. Note to stir in between this time period.
  5. Continue cooking till the pork is tender, and adjust the salt as per taste. Add in the potatoes with a little water if the mixture has turned dry.
  6. Let this simmer and cook for 10-15 minutes more till the potatoes are cooked.
  7. Serve warm alongside freshly cooked rice.
