ABOUT Beguni (eggplant fritters) RECIPE

Brinjal fritters are very popular in Bengal. Served with muri or puffed rice they taste awesome. It is a popular street food too.

Ingredients Serving: 4

  1. Brinjal (longer ones) 4
  2. Besan or chickpea flour 5 tablespoons
  3. Salt as per taste
  4. Turmeric powder 1/2 teaspoon
  5. Chilli powder as preferred
  6. Asafoetida 1/4 teaspoon
  7. Oil to deep fry
  8. A spoon of rice flour

Instructions

  1. Clean the brinjals
  2. Discard the crowns and chopped them vertically into thin pieces of about a cm in width
  3. In a pan add all dry ingredients except oil and adding water make a battery which should not be runny .
  4. The batter should stick to the brinjals
  5. Heat oil in a pan
  6. Coat the brinjals with batter and fry of both sides till golden brown.
