Ingredients Serving: 1

  1. 2 Eggs
  2. 1 medium sized potato finely sliced
  3. 1 onion chopped finely length wise
  4. Salt to taste
  5. Powdered black pepper 1 tbspn
  6. 2 tbspn Oil

Instructions

  1. Combine eggs, salt and pepper. Whisk well and keep aside.
  2. Place a non stick pan on medium flame and add oil to it and wait for it to heat up.
  3. Add the potatoes and shallow fry them on one side till golden brown by spreading them evenly in the pan.(finely sliced potatoes makes it easy to fry)
  4. When you turn the potatoes slices around to fry the other side, add the onions and fry them till translucent and till the potatoes are done too.( Onions can get translucent pretty quick, hence we add them a bit later)
  5. Now switch off the stove and add the potatoes & onions into the egg batter and whisk well again.
  6. Using the same oil(add more if needed), gently add the batter prepared in the pan and keep the stove on low heat
  7. Cook each side till golden brown and take off from the heat once done.
  8. The omlette is now ready to be eaten. You may like it with tomato ketchup, toast or just by itself!
  9. You may increase the number of eggs, potatoes and onions based on the number of people you cook for.
