ABOUT Maize Flour Murukku.... RECIPE

Gluten free and a guilt free snack to indulge upon at any time of the day. My innovative take on these famous savoury delicacy from South India. Be it a brunch or an after school snack or a tea-time snack, it actually suits everyone's idea of having these yummy savoury murukkus. Made with just a few ingredients, these can be easily made and stored for a long term use in air tight containers. Crispy and crunchy to the last bite.

Ingredients Serving: 5

  1. Maize flour 1 1/2 cups
  2. Gram flour 3/4 th cup
  3. Salt 1 tsp
  4. Dry red chilli flakes (paprika) 1 tbsp
  5. Turmeric 1/2 tsp
  6. Carom seeds 1 tsp
  7. Cumin seeds 1 tsp
  8. Curry leaves torn into small pieces a handful
  9. Oil 2 tsp
  10. Water to knead a stiff dough as required

Instructions

  1. First of all gather all the required ingredients.
  2. Next add all the other ingredients to the mixing bowl.
  3. Now add in the flours with oil and curry leaves and knead into a smooth but stiff dough with water as required.
  4. Take a handful of this mix and press into a chakli maker and start making them as we do for murukku.
  5. Fry on medium flame in hot oil.
  6. Fry in batches until the dough is used up fully.
  7. Serve them right away or store in airtight containers for later use after they come down to the room temperature.
  8. They become crispier as they cool down and can be relished upto 20 days or more.
