Ingredients Serving: 6

  1. Unsalted butter, at room temp 30gm
  2. Castor sugar 30gm
  3. Vanilla essence 1/2 tsp
  4. Egg, medium size 1
  5. Dark chocolate, 65gm (minimum 50% cocoa)
  6. Buckwheat flour 1/2 cup
  7. Cocoa powder 3 tbsp
  8. Salt 1/4 tsp
  9. Baking soda 1/4 tsp
  10. Chocolate chips, semi sweet, 1/4 cup plus more to sprinkle

Instructions

  1. Melt dark chocolate in a bowl in a microwave with short 10 sec spurts at high power. Stir in between each time. You can also do this in a double boiler. Set aside
  2. Sieve buckwheat flour, cocoa, salt and baking soda in a bowl
  3. In another bowl cream together butter and sugar till fluffy using a blender. Add the melted chocolate and whip again.
  4. Add essence and egg and whip till mixed well
  5. Fold in the dry mixture along with chocolate chips
  6. Lightly grease a baking tray and scoop dough on it with help of a spoon. Keep distance of 2 inches between each cookie
  7. Flatten them slightly with the spoon and spread them
  8. Sprinkle some chocolate chips on the top and keep the tray in the fridge for 10 mins
  9. Preheat oven at 180 degrees
  10. Bake the cookies for 12-15 mins till edges are set. The will be slightly soft and undercooked in the middle
  11. Remove tray from oven and let them sit on tray till they are cool as they will continue to cook
  12. Gently remove with spatula and store in airtight container
