Ingredients to make Di San Xian - Chinese Stirfried Vegetables

  • 1 tbsp light Soya sauce
  • 1 tbsp Rice wine
  • 1 tsp Sugar
  • 1 tsp Cornstarch
  • Oil for frying
  • 1 no Potato(sliced)
  • 1 no medium sized eggplant (sliced)
  • 1 no Bellpepper (chopped)
  • 1 no Onion (chopped)
  • 2 nos Garlic cloves

How to make Di San Xian - Chinese Stirfried Vegetables

  1. Take the soy sauce, rice wine, sugar, salt, and cornstarch in a small bowl. Add enough water and make a thin paste.
  2. Heat the oil in a pan, once the oil is hot, add the potato and fry until it turns golden brown in colour. Transfer the potato to a paper towel to absorb the extra oil.
  3. Add oil and fry till the eggplant until it turns golden brown. Transfer the eggplant to a paper towel. Leave about 1 tablespoon of oil in the same pan.
  4. Add green onion and garlic and stir a few times.
  5. Add bell pepper and saute for a while. Then add the eggplant and potato back to the pan and add the soy sauce mixture.
  6. Toss in immediately until all the vegetables are coated evenly with the sauce.
  7. Serve warm with steamed rice.
