ABOUT Ragi Idiyappam RECIPE

I absolutely love Idiyappam AND Ragi. So what better way to combine the 2 than as Ragi Idiyappam.

Ingredients Serving: 4

  1. 1 Cup Ragi Flour
  2. 1/2 + 1/2 tsp Oil
  3. Salt to Taste
  4. Boiling Water

Instructions

  1. Keep the water to boil.
  2. Add the salt to the ragi flour. Mix well.
  3. Next add the boiling hot water in small amounts to the ragi flour.
  4. Using a spoon, mix well till the dough starts to form a ball.
  5. Wait for a couple of minutes for the dough to cool.
  6. Knead with fingers to form a ball.
  7. Add 1/2 tsp oil and mix well.
  8. Set aside for 5 minutes.
  9. Now get the steamer ready. I used a pressure cooker for steaming and got the water in it boiling.
  10. Use the remaining oil to lightly grease the slots of idli plates.
  11. Divide the dough into 4 to 6 portions.
  12. Fit the medium sev plate into a Chakli press.
  13. Add one portion of dough into the Chakli press and press to create a disc in one slot of the idli plate.
  14. Repeat the process till all the dough is used up.
  15. Steam for 5 to 7 minutes.
  16. Turn off the heat and let the steamer cool for 7 to 10 minutes.
  17. Open the steamer and gently demold the Ragi Idiyappam.
  18. Serve the Ragi Idiyappam hot with sweetened milk, sweetened coconut milk, Vegetable Kurma or Vegetable Stew.
