Kesar Badaam Doodh (Saffron Almond Milk)

Ingredients to make Kesar Badaam Doodh (Saffron Almond Milk)

  • 3 cups Whole Milk
  • 10 - 15 almonds
  • 10 - 15 pistachios
  • 1/4 tsp cardamom powder (optional)
  • 2 tbsp sugar or as per taste
  • A few strands of saffron, more for garnishing

How to make Kesar Badaam Doodh (Saffron Almond Milk)

  1. Soak the almonds and pistachios over night or ten minutes in hot water. Peel the skin.
  2. Grind in a blender, adding a few spoons of whole milk gradually to get a fine smooth paste.
  3. Boil the rest of the milk in a saucepan on medium heat and keep stirring to prevent it from getting burnt. Make sure the quantity of the milk reduces and it thickens.
  4. Add in the almond paste, sugar, cardamom and saffron strands. Lower the heat to low and let it simmer for 4 to 5 minutes, stirring often. Turn off the heat.
  5. Serve hot with a few strands of kesar/saffron to garnish.
My Tip: You can have it cold also but in winters I would suggest you enjoy it hot.
