Chicken-Noodle in Coconut Milk

Ingredients to make Chicken-Noodle in Coconut Milk

  • 200 gms boneless chicken
  • (cut into bite-sized pieces and boiled in saline water)
  • 1 cup boiled Noodles.
  • 200 ml coconut milk
  • 2 tbsp. finely chopped onions
  • 1/2 tsp. each of ginger and Garlic minced
  • 1 Green chili chopped
  • 1&1/2 cup chicken stock

How to make Chicken-Noodle in Coconut Milk

  1. Add oil to a heavy bottom pan and drop in whole spices along with chopped onions, chilies, ginger and garlic on low flame. Fry till onions turn transparent.
  2. Now add the chicken and saute. Season with salt and add 1 cup of chicken stock.
  3. Let this simmer. Add noodles and boil this for a few minutes. If you feel the mixture is thick then add ½ cup more stock.
  4. Add coconut milk and when the soup reaches to a boil, turn off the flame.

My Tip:

Serve hot with buttered toast as an accompaniment.
