ABOUT Palthalikalu RECIPE

Palthalikalu is a traditional sweet made with riceflour pasta and sabhudana cooked in milk.

Ingredients Serving: 4

  1. Milk-500 ml
  2. Jaggery- 500 kg
  3. Rice flour- 1/2 cup( in traditional method , rice is soaked overnight and then dried in cloth and then powdered)
  4. Sabhudana-2 tbsp
  5. Elachi-6
  6. Ghee- 1 spoon

Instructions

  1. In a heavy bottomed vessel, boil 500ml milk .
  2. In a bowl, add rice flour and little jaggery and warm water/ milk and make a thick paste ( like a dough)
  3. In a non stick pan, add a spoon of ghee and fry saago and cashew nuts and when they are done add into the boiled milk. Add 500ml water into it and allow sabhudana to cook.
  4. Now take a biscuit press and keep the rice flour doughinto it and press it into milk mixture.
  5. Dont stir the rice flour pasta for 8 min.
  6. Now slowly stir once and add elachi for flavour. Keep stirring now and then.
  7. In another bowl add jaggery with little water and boil it and filter it and keep aside.
  8. To the milk mixture, add a smooth paste of water and riceflour to thicken the milk( like phirni)
  9. When we see that sabhudana is almost transparent in colour, then we are ready to switch off the stove.( I added little vanilla essence too but in traditional method it is not added)
  10. Let it cool for 15 min and then we can add filtered jaggery liquid. We can serve palthalikalu hot and the remaining we can have it as chilled dessert at night.
