ABOUT 2 Minutes Microwave Sticky Rice Flour Mango Stuffed Mini Cake RECIPE

This is my own recipe and a successful experiment with sticky rice flour. It is just 2 mins microwave mini cake using mango as stuffing. Also dessicated coconut can be used as stuffings which is equally good. The cake is definitely not like the regular cake baked using other flours. It is so soft and chewy. A flavorful and delicious quick and easy recipe.

Ingredients Serving: 3

  1. Sticky rice flour - ½ cup
  2. Sugar - 3 tbsp ( you can increase as per your taste)
  3. Milk - 100 ml
  4. Baking soda - a pinch
  5. Oil - 1 tbsp
  6. Mango - ¼ cup

Instructions

  1. In a mixing bowl add the sticky rice flour, sugar, baking soda, oil, milk and make a smooth batter. Let it rest for 3-5 mins.
  2. Grease a microwave safe dish. Pour half the batter and let it spread.
  3. Now layer the chopped mangoes over it. Pour the remaining batter and cover up the mangoes.
  4. Microwave for 2 mins. You can check in 1½ mins.
  5. Let it cool down. Demould it, cut and serve.
