ABOUT Mamaliga RECIPE

Anyone who loves porridge in breakfast or meal, this is an ultimate one from the Romanian cuisine. Mildly seasoned with salt and pepper assembled with fresh cream and cottage cheese served with boiled eggs and a healthy yogurt dip makes a complete healthy breakfast or a meal.

Ingredients Serving: 4

  1. Maize flour (course)- 1 cup
  2. Water - 3 cups
  3. Salt - 3/4 tsp
  4. Pepper - 1/2 tsp
  5. Cottage cheese-1 cup
  6. Fresh cream - 3 tbsp
  7. Tomatoe - 1
  8. Coriander - few springs
  9. Boiled eggs - 2
  10. For the yogurt dip:
  11. Yogurt - 1 cup
  12. Salt and pepper to season
  13. Coriander - 1 tsp chopped

Instructions

  1. Keep water to boil
  2. Just before it boils add the salt and pepper
  3. Now slowly stir in the maize flour.
  4. Keep stirring with a wooden laddle
  5. Simmer for 2 to 3 minutes
  6. Put off the fire.
  7. For the assembling:
  8. Keep the crumbled cottage cheese, fresh cream ready
  9. Deseed and chop half a tomatoe and cut circles of remaining half
  10. Spread a layer of prepared porridge on a plate followed by spreading a spoon of fresh cream
  11. Now spread crumbled cottage cheese and chopped coriander
  12. Spread again a layer of porridge and repeat with the same process
  13. Finally top with cottage cheese,chopped tomatoe and tomatoe rings.
  14. Mix all the ingredients for the yogurt dip
  15. Serve with yogurt dip and boiled eggs halved and seasoned with salt and pepper
