This is a new gluten free form of our famous street food papri chat

Ingredients Serving: 4

  1. For papri
  2. 1/2 cup kuttu flour
  3. 1 tbsp Rice Flour
  4. 1 tsp ghee
  5. Salt to taste
  6. 1/2 tsp red chilli powder
  7. Oil for frying
  8. For topping
  9. 2 big boiled potato cut into dices
  10. Salt to taste
  11. 1 tsp Roasted Cumin Powder
  12. 1 tsp amchoor powder or 1 tbsp lemon juice
  13. For curd and tamarind mousse
  14. 1 cup hung curd
  15. 2 tbsp thick tamarind ( Sauth) chutney
  16. For garnishing
  17. Fonely chopped coriander leaves
  18. Few spoon of tamarind chutney

Instructions

  1. For papri mix all the ingredients and knead a dougn. Roll out and prick with fork so that it doesn't puff up while frying
  2. Cut small roundelswith cookie cutter
  3. Heat oil and fry these roundels till crisp . Let it cool down.
  4. For topping mix all the ingredients and keep it aside
  5. For curd tamarind mousse .In a bowl take thick hung curd . To this add tamarind chutney and whip with a blender till creamy consistency.
  6. Fill this in a piping bag eith star nozzle
  7. For presentation Put kuttu papri on serving platter
  8. Place topping on it and then pipe out curd tamarind mousse over it. Drizzle some tamarind chutney and arnish with coriander leaves and serve
