Spicy, silky, sweet green chilli halwa

Ingredients Serving: 5

  1. corn flour 1/4 cup
  2. Maida 1/4 cup
  3. Green chillies 4 nos
  4. Water 1 1/2 cup + 1 cup
  5. Cardamom 3 nos powdered
  6. Cashews 10 nos
  7. Ghee 5 tablespoon
  8. Sugar 2 1/4 cup
  9. Green food colour a pinch (optional)

Instructions

  1. BOIL 1 TSP SUGAR, 1 CUP WATER & 4 DE-SEEDED GREEN CHILLIES FOR 5 MINS
  2. DRAIN & AGAIN BOIL IN FRESH WATER WITH SUGAR FOR 5 MINS, REPEAT THE PROCESS 4 TIMES TILL CHILLIES TURN PALE
  3. GRIND THE BOILED CHILLIES INTO A COARSE PASTE
  4. MIX 1.5 CUPS WATER, 1/4 CUP CORNFLOUR, 1/4 CUP FLOUR INTO A SMOOTH SLURRY
  5. ADD GROUND CHILLI PASTE
  6. BOIL 2- 1/4 CUPS SUGAR & 1 CUP WATER TILL THE SUGAR DISSOLVES
  7. ADD CHILLI FLOUR WATER & 1/4 TSP GREEN FOOD COLOUR & SIMMER
  8. AS THE MIXTURE STARTS THICKENING, ADD 5 TBSP GHEE
  9. WHEN GHEE STARTS LEAVING THE SIDES, ADD 10 CASHEWS & 3 TSP CARDAMOM POWDER
  10. SPREAD EVENLY ON A GREASED PLATE
  11. COOL & CUT INTO SQUARES
  12. STORE IN AN AIR TIGHT CONTAINER
