ABOUT Gujarat special " Papdi no lot " ( Steamed rice flour) RECIPE

This recipe is very popular in Gujarat during Navaratri festivals and during winters. You will find lots of slalls selling this wherever there is Garba celebration. People enjoy it hot, with oil masala.

Ingredients Serving: 2

  1. Rice Flour 2 cups
  2. cooking soda 1/2 Tsp
  3. Oil 2 tsp + 2 tbsp + 2 tbsp
  4. Green chilli crushed 2.
  5. Salt to taste
  6. Ajwain 1 tsp
  7. Sesame seeds roasted 2 tbsp
  8. Papdi masala ( fenugreek seed powder + salt + red chilli) 1 tsp

Instructions

  1. Boil 2 1/2 cups of water
  2. As it starts boiling, add salt and cooking soda.
  3. Add Green chillies, Ajwain, Sesame seeds and 1 tsp oil.
  4. Now add Rice flour gradually stirring continuously with a rolling pin.
  5. Boil water in steamer.
  6. As the flour gets mixed well ,switch off the gas flame.
  7. Now steam your flour ( half at a time) in a steamer using a Dhokala plate.
  8. You need to steam for 12 to 15 minutes.
  9. Keep a watch. The flour will change its color. As it becomes a bit yellowish it's ready.
  10. Take out from the steamer, add 1 tbsp oil and knead to make it soft.
  11. Your Mouthwatering " papdi no lot" *is ready to enjoy.
  12. Serve by adding 1 tbsp oil and masala.
  13. Steam other half the same way.
