Ingredients Serving: 8

  1. Wholewheat flour 1 cup
  2. Cocoa powder 1/2 cup
  3. Baking powder 1 and 1/2 tsp
  4. Baking soda 1/4 tsp
  5. Salt 1/2 tsp
  6. Eggs 2
  7. Sugar 1 cup
  8. Vanilla essence 1 tsp
  9. Vegetable oil 1/2 cup
  10. Milk 1/2 cup
  11. Cashew nuts (split) 1/4 cup
  12. Powdered Jaggery 2 tbsp

Instructions

  1. Sieve the wholewheat flour, baking powder, baking soda and salt 4-5 times.
  2. Whisk together eggs and sugar.
  3. To this, add vanilla essence and oil and whisk again.
  4. Add the sieved dry ingredients and milk alternately in the wet mixture and beat well. For each beat, start and end by adding dry ingredients.
  5. Divide this batter into two parts.
  6. To one half, add the cocoa powder and mix well.
  7. Add 1-2 tbsp of milk to this half, if required. That is, if you feel that the batter is too thick, add little more milk.
  8. Preheat the oven to 180 degree centigrade.
  9. Grease a loaf tin and sprinkle the powdered jaggery.
  10. Arrange the cashew nuts on top of this.
  11. Now pour the two batter alternately using a spoon, creating patterns.
  12. Bake for 40 minutes, or until a toothpick inserted comes out clean.
  13. Allow to cool completely. Slice and enjoy!!

Came out wonderful, tasty, fluffy! Minor changes - did not use dry fruits and jaggery. Rest followed the recipe!
