ABOUT Zebra cake (eggless) RECIPE

It is a perfect blend of chocolate and vanilla flavours. Very easy to make and a very good snack for kids or can be had with a cup of tea.

Ingredients Serving: 4

  1. All purpose flour 11/2 cups
  2. Baking powder 1 tsp
  3. Cocoa powder 2 tbsp
  4. Baking soda 1/2 tsp
  5. Curd 1/2 cup
  6. Sugar 1 cup
  7. Vinegar/ Lemon juice 1 tsp
  8. Oil 1/2 cup
  9. Vanilla essence 11/2 tsp.
  10. Salt a pinch
  11. Milk 5 tbsp

Instructions

  1. Preheat your oven at 170 to 180 degree C.
  2. You can use hand blender to blend all the ingredients quick and easily.
  3. Take the curd in a big bowl  add sugar, vinegar, oil, 2 tbsp milk and vanilla essence and make a smooth paste.
  4. Sieve all the dry ingredients. All purpose flour, baking powder, salt and baking soda.
  5. Now in a large bowl add dry ingredients into wet ingredients in a small batch. Mix with cut and fold method.
  6. Mix well. Add more milk if batter is too thick.
  7. Divide the batter into 2 equal portions. Add cocoa powder and 2 tbsp milk in one of the batter. 
  8. Grease a 8” Baking tray with oil. Place butter paper/ parchment paper on the bottom of the tray or dust with flour.
  9. In the middle of the pan pour 2 tbsp. of each batter one by one at a time to create layers.Repeat process till the end.
  10. Tap gently to remove air bubbles.
  11. Place the tray inside an oven. Bake for 25 to 30 min
  12. To check if it is cooked, insert a tooth pick and it should come out clean.
  13. Let it cool.Enjoy cake with tea…yum yum.
