ABOUT Baked Bhakarwadi RECIPE

Bhakarwadi is a popular Maharashtrian savoury snack. So come let's relish them in a baked form, totally guilt free, with your evening cup of tea/coffee. They are far better than the fried ones and you can devour them with any spicy chutney or sauce as an appetizer too. Traditionally they are deep fried but the baked ones are equally delicious. I gave my own twist to the original recipe and added few ingredients of my choice.

Ingredients Serving: 4

  1. Dough-
  2. Besan 1 cup
  3. Atta 1 cup
  4. Pinch of salt
  5. Asafoetida 1/4 teaspoon
  6. Oil 2 tablespoon
  7. Stuffing -
  8. Fresh grated coconut 1 cup
  9. Coriander leaves chopped 1/2 cup
  10. Pinch of salt
  11. Roasted peanuts 1/4 cup
  12. Dry roasted sesame seeds 2 teaspoon
  13. Ginger grated 1 teaspoon
  14. Chilli powder 1 teaspoon
  15. Garam masala powder 1/2 teaspoon
  16. Flax seed 1 tablespoon
  17. Ajwain 1/2 teaspoon
  18. Coriander-cumin powder 1 teaspoon
  19. Turmeric powder 1/2 teaspoon
  20. Cumin seeds 1/2 teaspoon
  21. Lime juice 1 teaspoon
  22. Tomato ketchup as required

Instructions

  1. Mix together besan, atta, salt, asafoetida and oil. Knead into tight dough by adding some water. Keep aside for 30 minutes.
  2. In a bowl, mix all the ingredients for the stuffing. Grind into a coarse powder. Keep aside. Divide the dough into 3 equal portions.
  3. Roll each portion into a large circle by dusting some flour. Spread a little of the ketchup all over leaving the edges.
  4. Spread 6-7 tsp. of the stuffing all over and press them with the back of your spoon. Gently roll over till the end. Press lightly and cut them in 1/2" - 1" thickness. with a knife or pizza cutter.
  5. Place them on a baking tray and bake in a pre-heated microwave(Convection mode) at 180 degrees C. for 30-35 minutes by flipping them halfway till golden brown.
