Scrumptious bites of dates and nuts in a brownie; eggless, no bake and ready in less than 20 minutes.

Pitted dates 1 1/4 to 1 1/2 cups
Roasted almonds 1/2 cup
Sunflower seeds 1/4 cup
Cornflakes 1/3 cup
Cocoa powder 2 to 3 tablespoon
Vanilla essence/extract 1/2 teaspoon
For the chocolate glaze:
White chocolate, chopped 1 cup
Dark chocolate, chopped 1/4 cup
Instructions
Place the roasted almonds and sunflower seeds in a food processor and process until finely chopped.
Add the cornflakes and give it one more whirl to break up the flakes.
Tip in the dates, 2 tablespoons cocoa powder, vanilla essence and process until they start to come together (break up the dates if they start to stick together).
If you hold a tablespoon of dough in your hand press, it should hold together; if not, add more dates. Scrape the sides of the bowl in between.
Transfer the mixture into a large bowl and mix with hands to evenly distribute all the ingredients until it forms a soft dough and you can make balls of it.
Transfer to a parchment lined or foil lined loaf pan, and press evenly with the bottom of flat bottomed glass or bowl. You can even roll it between two sheets of parchment paper to the thickness you want.
To make the chocolate glaze:
In a bowl, take 1 cup of chopped white chocolate and melt in bursts of 30 seconds in a microwave until almost melted. Remove from oven and mix well with a spatula until fully melted and smooth.
Do the same with the dark chocolate.
Alternatively, you can melt the chocolate in a double boiler.
Once both the chocolates are ready, pour the white chocolate over the date brownie in the pan. Spread evenly with a spatula and gently tap to even out the layer of chocolate till the edges of the pan.
Now drop spoonfuls of melted dark chocolate in dollops all over the white chocolate layer. Add as much or as little as you want.
Using a toothpick, gently make swirls in the chocolate; you don’t have to precise, just have fun making random designs.
Chuck it in the fridge to set for about 10 minutes.
After 10 to 15 minutes, remove from fridge. Gently remove the brownie from the pan along with the foil.
Peel off the foil and place on a board.
Cut into desired shapes with a sharp knife.

Store bars in the fridge for up to 3 weeks or in the freezer up to 3 months.
