Qobani Ka Meeta

Ingredients to make Qobani Ka Meeta

  • Dried apricots-1cup,water-2cups,sugar-1/2cup

How to make Qobani Ka Meeta

  1. Soak the Apricots in boiling water for 60 minutes,in a dekchi large enough to cook the soaked Apricots..in the same vessel.keep covered.
  2. The Apricots would have bloated,making it easier to gently open the apricots and remove the seed.After removing all the seeds,gently squeeze the soaked Apricots in the same water and keep on a medium flame to cook.
  3. When the Apricots are well cooked,add the sugar and cook some more ,till you get the right consistency..the mixture should be of a thick flowing consistency..when it is ready
  4. Break the seeds and soak the badam inside in very hot water for about 15 minutes or till the skin comes out easily..gently halve the seed and mix them in the finished qobani..
  5. Mix well ,cool and store in fridge for an hour or till ready to serve
  6. To serve,top the Qobani with fresh cream and serve.

My Tip:

It is better you count the Apricots before soaking,so that you know how many seeds are there to remove..
