ABOUT Apple & Cranberry Upside Down Cake RECIPE

Apple & Cranberry upside down cake is a perfect tea time cake and a dessert for your evening monsoon parties. Just when apples are in season this is the right time to get your hands into baking and brace yourself with some baking therapy.

Ingredients Serving: 6

  1. FOR TOPPINGS :
  2. Apple, thin sliced 1 unit
  3. Dried or fresh cranberries 1 cup
  4. Melted butter 2 tablespoon
  5. Brown sugar 4 tablespoon
  6. FOR CAKE:
  7. All purpose flour 1 cup
  8. Baking powder 1 teaspoon
  9. Baking soda 1/2 teaspoon
  10. Sugar 3/4 cup
  11. Vegetable oil 3/4 cup
  12. Eggs 2
  13. Butter milk 1/2 cup
  14. Vanilla extract 1 teaspoon
  15. Cinnamon powder 1/2 teaspoon

Instructions

  1. FOR TOPPING : Wash and slice apples thin and keep aside.
  2. Meanwhile melt butter and brown sugar together till it looks caramelized. Turn off the gas and keep aside.
  3. Grease a 8 inch baking pan with butter and place the apple slices. (i used a spring form pan).
  4. Add cranberries all over the layered apples and pour in the butter and brown sugar generously and keep aside.
  5. FOR CAKE : Pre heat the oven at 180 degree C for 15 minutes.
  6. Sift flour, baking powder and baking soda together in a bowl and keep aside.
  7. In a separate bowl, add sugar and butter and whisk till sugar dissolves.
  8. Now add eggs and vegetable oil to the sugar butter mix and whisk again till creamy.
  9. Add vanilla extract and cinnamon powder and give a quick stir again.
  10. Now add the flour mix gently into the wet mix and fold in to make a smooth batter.
  11. Add butter milk and mix again such that everything incorporates well.
  12. Pour the prepared batter all over the pan covering the layered apples.
  13. Gently tap the pan to break the air bubbles formed.
  14. Bake the cake at 180 degree C for 35-40 minutes or till the tooth pick inserted in the center comes out clean.
  15. Carefully remove the baked cake and allow it to rest on a wire rack for 10 minutes.
  16. Gently release the spring of the pan and take it out. Now carefully flip the cake on a plate or a serving platter and remove the bottom tray of the pan.
  17. Let the cake cool down completely, slice and serve.
