ABOUT Banana & Dry Fruits Loaf Cake RECIPE

Here is a healthy and a delicious homemade loaf cake having the goodness of both bananas and some dry fruits. This combination is very good and has the flavour of the bananas and the crunch coming from the crushed dry fruits. You can use up any over-ripe bananas in this recipe. Enjoy it as it is, with your evening cup of tea or simply as a desert with your favourite ice-cream topping or some homemade rabri drizzled over it.

Ingredients Serving: 3

  1. Maida (refined flour) 2 cups
  2. Baking powder 1 1/2 teaspoon
  3. Baking soda 1/2 teaspoon
  4. Salt 1/2 teaspoon
  5. Ripe bananas, mashed 2
  6. Brown sugar 3/4 cup
  7. Yoghurt 1/2 cup
  8. Eggs beaten 2
  9. Vanilla essence 1 teaspoon
  10. Mixed dry fruits, crushed 1/2 cup

Instructions

  1. Sift together the flour, baking powder, baking soda and salt. In a separate bowl, add the mashed banana, brown sugar, yoghurt, eggs and vanilla essence. Combine everything and add the crushed dry fruits. Mix well.
  2. Gently fold in the sifted flour and transfer the contents to a greased loaf tin. Bake in a pre-heated microwave oven for 40 minutes.
  3. Remove the tin on a wire rack and set aside to cool for 30 minutes. Flip it over on the rack and let it cool further.
  4. Slice it according to desired thickness and enjoy as a dessert topped with your favourite ice-cream or with your evening cup of tea.
