This is the yummiest Pulav with vegetables and coconut milk.

Ingredients Serving: 3

  1. Basmati rice 1 cup
  2. Fresh coconut Milk 3 cups
  3. Olive oil 2 tablespoon
  4. Fennel seeds 1/2 teaspoon
  5. Cardamom 3 cloves
  6. Bay leaf
  7. Cloves 3
  8. Star anise 1
  9. Cashews required
  10. For grinding Green chillies 2
  11. Garlic 6
  12. Ginger small inch
  13. Potato 1 big
  14. Carrot 2
  15. Beans 10-15
  16. Peas fistful
  17. Mint leaves
  18. Coriander leaves

Instructions

  1. Soak 1 cup basmati rice for 20 minutes
  2. Add 2 sliced onions and 11/2 teaspoon of ginger garlic paste
  3. Add peas,potato,carrot and beans
  4. Grind 1/2 coconut with 3 cups of water to prepare coconut milk
  5. Add coconut milk to the vegetables
  6. Add the soaked rice ,and salt to taste and a fistful of fresh mint and coriander leaves
  7. Stir once or twice and stir well till it is done
  8. Serve hot
