EXPERIENCE A BLISSFUL SLICE OF HONEYED CHRISTMAS FRUIT AND NUT CAKE

All-purpose flour2 1/2 cups
Cocoa powder 1/3 cup
Honey 1/2 cup
Natura Sugar Free 1/2 cup
Beetroot juice 1/2 cup
Carrot juice 1/2 cup
Pineapple juice 1/2 cup
Eggs 3
Baking powder 2 1/2 teaspoon
Cinnamon powder 1/2 teaspoon
All spice powder 1/2 teaspoon
Pinch of salt
Olive oil 1 cup
Vanilla extract 1 teaspoon
Cherries 1/2 cup
Tutti frutti 1/3 cup
Black raisins 1/3 cup
Chopped apricots 1/2 cup
Golden raisins 1/3 cup
Cashew nuts 1/3 cup
Walnuts 1/3 cup
Almonds 1/3 cup
Instructions
Mix all the nuts together
Sieve all-purpose flour, coco powder, baking powder, spice mix and salt .
Break eggs and add oil and brown sugar to it .
Whisk nicely till everything is blend together .
Now add the dry mixture little by little while whisking at the same time.
Mix everything nicely and whisk for atleast 20 to 25 minutes if using a manual whisker and atleast 7 to 8 minutes if using an electric whisker.
Once, the batter has become nice and flowly, add the mixed nuts and mix well.
Simultaneously, you need to preheat the oven at 180 degree centigrade for at least 10 minutes.
Use a parchment paper and place on the bottom of the cake tin. Pour the batter into it and let it settle so there are no more bubbles.
Bake this cake for another 20 to 25 minutes till the take is nicely baked, risen and you can take a whiff from the farthest corner of your house.
Now don’t jump to have this cake immediately.. Let it cool down completely…Fluffy in the middle, crispy in the ouside and devilishly good, enjoy a slice of cake with some warm milk..
