Ingredients Serving: 8

  1. All-purpose flour2 1/2 cups
  2. Cocoa powder 1/3 cup
  3. Honey 1/2 cup
  4. Natura Sugar Free 1/2 cup
  5. Beetroot juice 1/2 cup
  6. Carrot juice 1/2 cup
  7. Pineapple juice 1/2 cup
  8. Eggs 3
  9. Baking powder 2 1/2 teaspoon
  10. Cinnamon powder 1/2 teaspoon
  11. All spice powder 1/2 teaspoon
  12. Pinch of salt
  13. Olive oil 1 cup
  14. Vanilla extract 1 teaspoon
  15. Cherries 1/2 cup
  16. Tutti frutti 1/3 cup
  17. Black raisins 1/3 cup
  18. Chopped apricots 1/2 cup
  19. Golden raisins 1/3 cup
  20. Cashew nuts 1/3 cup
  21. Walnuts 1/3 cup
  22. Almonds 1/3 cup

Instructions

  1. Mix all the nuts together
  2. Sieve all-purpose flour, coco powder, baking powder, spice mix and salt .
  3. Break eggs and add oil and brown sugar to it .
  4. Whisk nicely till everything is blend together .
  5. Now add the dry mixture little by little while whisking at the same time.
  6. Mix everything nicely and whisk for atleast 20 to 25 minutes if using a manual whisker and atleast 7 to 8 minutes if using an electric whisker.
  7. Once, the batter has become nice and flowly, add the mixed nuts and mix well.
  8. Simultaneously, you need to preheat the oven at 180 degree centigrade for at least 10 minutes.
  9. Use a parchment paper and place on the bottom of the cake tin. Pour the batter into it and let it settle so there are no more bubbles.
  10. Bake this cake for another 20 to 25 minutes till the take is nicely baked, risen and you can take a whiff from the farthest corner of your house.
  11. Now don’t jump to have this cake immediately.. Let it cool down completely…Fluffy in the middle, crispy in the ouside and devilishly good, enjoy a slice of cake with some warm milk..

Can it be done with unsalted butter instead of olive oil and sugar instead of sugar free..
