ABOUT Diwali special mixed veggies in coconut milk RECIPE

This is a Konkani traditional dish made during festivals. This rich thick coconut milk gravy is delicious and has no onion or garlic.

Ingredients Serving: 4

  1. Pumpkin - a small piece
  2. Ash gourd - 1/2 piece
  3. Elephant yam - a small piece
  4. Potato - 2-3
  5. Snake gourd - chopped into small pieces, a small bowl
  6. Green chillies - 5
  7. Cashews - 12
  8. Cumin Seeds - 2 teaspoon
  9. Coconut milk powder - 1 cup(thick milk)
  10. Asafoetida - A Pinch
  11. Salt to taste

Instructions

  1. Chop all the vegetables into wedges. Wash and add into a vessel excluding potatoes and elephant yam. Add water only upto the level of vegetables. Add little salt and boil till half done.
  2. Pressure cook potatoes and elephant yam for four Whistles. Once the cooker is cooled add this to the vessel containg half boiled vegetables.
  3. Add green chillies, cashews, salt and boil for 3 minutes.
  4. Now add cumin seeds and thick coconut milk.
  5. Boil for 5 minutes.
  6. Then add asafoetida and close the lid for 5 minutes to retain the aroma.
  7. Serve hot with chapati, bread or rice.
