Ingredients Serving: 6

  1. 125 gms Castor sugar
  2. 2 oranges, slice one, juice one and spice one
  3. 1 lemon, freshly juiced
  4. 150 ml water
  5. 6 cardamom pods
  6. Nutmeg, freshly grated
  7. 5 cm piece of fresh ginger
  8. Cinnamon sticks as per choice
  9. 4 tbsp brandy or cointreau
  10. 2 bottles red wine
  11. 12 cloves
  12. 1 1/2 tbsp honey
  13. 1 whole orange, washed and dried with cloves studding it
  14. 2 star anise

Instructions

  1. Cut the orange into quarters then into slices. Push cloves into the orange. This turns it into a spiced orange.
  2. Cut the lemon in half, then into quarters.
  3. Pour the two bottles of red wine into the large saucepan. Crush the cardamom pods and add them in.
  4. Add the water, cinnamon sticks, brandy, sugar, lemon and oranges. Peel the ginger and cut into slices and add this to the concoction.
  5. Grate fresh nutmeg into the liquid. Add the orange and lemon juices.
  6. Over a medium heat, stir the mulling wine to dissolve the sugar. Once dissolved, turn the heat down and let simmer for half an hour.
  7. Taste the flavours. If it needs more spices, add. Otherwise, it's ready for serving. Just add in the honey.
  8. Pour into glasses. Decorate with one stick of cinnamon per glass, a star anise and some sliced spiced orange.
