ABOUT Baked Medu Vada RECIPE

As a South Indian, Idli Dosa Vada are part of my breakfast...I love vadas however I dislike fried food so I decided to give the regular vada a healthier avtar and it still tastes good

Ingredients Serving: 5

  1. Akha Urad dal 1 cup
  2. Ginger 1 tablespoon
  3. Peppercorns 6-7
  4. few curry leaves
  5. Green chilli 2-3
  6. Salt to Taste
  7. Rice flour 1 tablespoon

Instructions

  1. Soak urad dal for 5-6 hours and grind it with 2-3 tbsp water. The batter should not be runny or rubbery
  2. Add chopped green chilly, salt, rice flour ginger pepper corns curry leaves and coarsely grind it
  3. Leave the batter to ferment for 3-4 hours. Alternatively add 1/4 teaspoon baking soda and whisk well if you wish to make it immediately
  4. On Greased baking tray drop batter using rounded tablespoon and flatten it, make a hole in centre. Brush all the vadas with oil so that top remains moist ...This is to prevent surface from drying . I have used donut moulds here to get perfect shape for Vadas. Grease donut moulds. Pour the batter , level evenly and brush tops with oil
  5. Preheat the oven to 180. Bake for 25-35 min until it becomes brown...When 50% time elapses, turn the vadas over and continue baking. This is to ensure even browning if you have dropped Vadas directly on tray
  6. Allow it to cool slightly and serve...Baked vadas are ready to eat
