ABOUT Crispy Bhakerwadi RECIPE

Crispy bhakarwadi is a maharashtrian lip-smacking, sweet and spicy snack recipe. It is usually prepared by mixing besan and all purpose flour which is then topped with mixture of spices. This recipe is very ideal for festive seasons.

Ingredients Serving: 6

  1. For the Dough
  2. Besan/gram flour 2/3 cup
  3. Maida/refined flour 1 1/2 cup
  4. Chilli Powder 1 teaspoon
  5. Hing/asafoetida 1/4 teaspon
  6. Salt to taste
  7. For the stuffing
  8. Roasted cumin powder 1/2 teaspoon
  9. Coriander/dhania powder 1/2 tablespoon
  10. Roasted poppy seeds /khus-khus 2 teaspoon
  11. Grated coconut 100 grams
  12. Green chillies chopped 3
  13. Roasted white sesame seeds /safed til 2 teaspoon
  14. Powdered sugar 1 teaspoon
  15. Finely chopped ginger 2 teaspoon
  16. Chopped coriander 1/4 cup
  17. Chilli powder or as per the taste 2 teaspoon
  18. Turmeric powder 1/2 teaspoon
  19. Asafoetida 1/4 teaspoon
  20. Salt to taste
  21. Oil for Deep frying

Instructions

  1. Sieve the besan, refined flour, chilli powder, asafoetida and salt together and transfer in a mixing bowl.
  2. Add 2 tsp oil and mix well then make a stiff dough using little warm water and keep aside covered with a damp cotton cloth.
  3. Mix all ingredients for stuffing in a bowl.
  4. Divide the stuffing into equal portions and keep aside.
  5. Divide the dough into equal portions and roll out each portion into a small circle for 4 inch diameter.
  6. Place a portion of the stuffing and roll out carefully like a cylinder.
  7. Make more such cylinder shaped vadis
  8. Arrange all the cylinder shaped vadis in a plate and steam for 20 minutes in a steamer.
  9. Cool and cut them into 2 cm round discs.
  10. Heat the oil in a kadhai and deep fry these vadis till they turn golden brown and crisp.
  11. Take them out on an absorbent paper.
  12. Serve hot or store in an air-tight container.
  13. Crispy and lip smacking Bhakerwadi are ready.
