Cheesy Polenta with Sauteed Mushrooms

Ingredients to make Cheesy Polenta with Sauteed Mushrooms

  • 2 tbsp Butter
  • 200gms Mushrooms, washed and sliced
  • 3-4 Garlic cloves, chopped
  • 2 Cups Vegetable Broth
  • 2 tsp Lemon juice
  • 1 cup Cheese
  • 1 cup milk
  • Salt and black pepper to taste
  • 1 cup Instant Polenta
  • a handful of coriander leaves, chopped

How to make Cheesy Polenta with Sauteed Mushrooms

  1. Heat butter gently over a heavy bottom pan, add the mushrooms and saute. Add in the garlic, lemon juice and 1/2 cup broth, season and let reduce. Turn off flame and keep aside.
  2. Bring Milk and remaining broth to a boil, add polenta and cook for 5 minutes. Stir in cheese and season with black pepper.
  3. Top the hot polenta with sauteed mushrooms and coriander leaves and serve.

My Tip:

Add a touch of Oregano!
