ABOUT Cheesy Polenta with Sauteed Mushrooms RECIPE

Cheesy polenta topped with garlicky buttery sauteed mushrooms make a dish that's simply sensational!

Ingredients Serving: 4

  1. 2 tbsp Butter
  2. 200gms Mushrooms, washed and sliced
  3. 3-4 Garlic cloves, chopped
  4. 2 Cups Vegetable Broth
  5. 2 tsp Lemon juice
  6. 1 cup Cheese
  7. 1 cup milk
  8. Salt and black pepper to taste
  9. 1 cup Instant Polenta
  10. a handful of coriander leaves, chopped

Instructions

  1. Heat butter gently over a heavy bottom pan, add the mushrooms and saute. Add in the garlic, lemon juice and 1/2 cup broth, season and let reduce. Turn off flame and keep aside.
  2. Bring Milk and remaining broth to a boil, add polenta and cook for 5 minutes. Stir in cheese and season with black pepper.
  3. Top the hot polenta with sauteed mushrooms and coriander leaves and serve.
