ABOUT Chakli / chakri / murukku RECIPE

Chakli is spiral shaped, deep fried snack. Steamed maida recipe makes the fried snack little dense. So to make it less dense or light texture, I have steamed the maida in pressure cooker before making chakli. By this steaming technique, chakli will be crispy light yet met in your mouth texture. Every region has its own way of making chakli. In Gujrat and Maharastra, chakli is made from all purpose flour or whole wheat flour. In Gujrat, it also called chakri. In southern part of India, it is known as murukku and it is made from urad dal flour and / or rice flour. This is my mom' s recipe, and I made it exactly same way she makes it. She usually makes this during Diwali festival along with other snacks. I have added til to it which give nice nutty flavour to it.

Ingredients Serving: 6

  1. Yellow moong dal 2 cups
  2. Maida 4 cups
  3. Ajwain 2 tablespoon
  4. White til 2 tablespoon
  5. Yellow mirchi powder
  6. Salt to taste
  7. Oil for deep frying

Instructions

  1. Take 4 cups maida 2 cups moon dal
  2. In a cooker take 4 glass of water and washed moong dal
  3. Place dal on a plate
  4. Make a potli of maida
  5. Place maida in a cooker
  6. Let it steam for four whistles
  7. Take the boiled dal in a plate
  8. Open the maida potli
  9. Steam maida as shown
  10. Break the lumps of maida well
  11. Rub maida with the fingers
  12. Seive maida in a paarat
  13. Sieve maida well
  14. Add 2 tablespoon of mirch powder to the maida
  15. Add 2 tablespoon ajwain
  16. Add 2 tablespoon white til
  17. Add salt to taste
  18. Mix all the ingredients thoroughly
  19. Make a smooth dough
  20. Add little water to make the dough smooth
  21. Cover the dough with a cotton cloth
  22. Use star shape press in a chakli machine
  23. Add the dough in the machine
  24. Make chakli as shown
  25. Press chakli on a plastic sheet before frying
  26. Heat oil in a kadhai and fry chakli
  27. Fry till it is golden brown
  28. Now chakli is ready to serve
  29. Place the fried chakli on a oil absorbant paper and store it in an airtight container.
