About Gajar ki Kanji Recipe

A delicious fermented drink of carrots. Made in winters, it is something what my mother loves.

Gajar ki Kanji

Ingredients to make Gajar ki Kanji

  • 4 carrots, large
  • 1 medium beetroot
  • 3 tbsp salt
  • 1 1/2 tbsp chili powder (Coarse)
  • 4 tbsp mustard powder (Coarse)
  • 18 cups water

How to make Gajar ki Kanji

  1. Scrub and clean the carrots and the beetroots thoroughly. You can even use a knife to slightly peel out the outer layer of the carrots. (Avoid using a peeler).
  2. Cut the carrots and the beetroot into medium sized batons.
  3. Add in 18 cups water and transfer the contents into a large sized mason jar.
  4. Cover the mouth with a muslin cloth, firmly secured with a string.
  5. Keep in the sun for 3 to 4 days.
  6. Once ready, keep in the fridge.
  7. Tastes best when served chilled.

My Tip:

You will know when it is ready as it will begin to smell fermented. This takes about 3 to 4 days.
