ABOUT KESAR KAJU KATLI RECIPE

Kesar kaju katli is a popular authentic sweet of India made up of pure cashew powder.

Ingredients Serving: 10

  1. Cashews 250 gms
  2. Milk powder 4 tbsp
  3. Sugar 200 gms
  4. Water 100 ml
  5. Milk two tbsp
  6. Saffron 1/2 tesp
  7. Silver leaves 3-4

Instructions

  1. Grind cashews to very fine powder in 2-3 batches. Grind on pulse mode giving pulses of seconds, else it will release oils.
  2. Seive cashew powder.
  3. Add milk powder to cashew powder.
  4. Dissolve saffron in warm milk.
  5. Heat sugar and water in a wok.
  6. Boil till two thread consistency sugar syrup is ready.
  7. Switch off the flame and add dissolved saffron.
  8. Add cashew powder and mix well.
  9. If mixture is too dry to bind into a smooth dough then add one tbsp warm milk.
  10. Rest it for ten minutes.
  11. Remove the dough onto a thick plastic sheet and knead well.
  12. Place the dough between two sheets and roll into desired thickness.
  13. Garnish with silver leaves.
  14. Rest it for ten minutes.
  15. Cut diagonally to diamonds shape.
