We had this Yummy breakfast, baked eggy muffins with colorful veggies giving the Tuttifruity effect .Quick and zesty !

Ingredients Serving: 3

  1. Eggs 2
  2. Small red bell pepper 1
  3. Small yellow bell pepper 1
  4. Small carrot 1
  5. Chopped green onion 1
  6. Few florets broccoli
  7. Coriander little
  8. Salt to taste
  9. Pepper as per taste too
  10. Few chilli flakes
  11. Some butter to brush
  12. Bread slice as required
  13. Mayonnaise as required 1 tablespoon

Instructions

  1. Chop veggies fine
  2. Beat Eggs
  3. Add all chopped veggies
  4. Mix well add salt pepper too
  5. Now ready the silicon muffin moulds brushing with melted butter
  6. Fill up all moulds half to give space to swell
  7. Keep in preheated oven on 180°℃ for 10 -15 minutes
  8. Poke with tooth pic and see if done and not wet
  9. Take out from oven in a tray
  10. Cool and take out in a tray
  11. Cool them
  12. Take bread slice and spread mayonnaise., Cut out desired shape ie triangle or squares and place these muffins on them
  13. Serve warm and enjoy either way with or without bread
