ABOUT Gajar halwa spring rolls RECIPE

Its a unique dish where our authentic Gajar halwa is wrapped and presented in sync with a Chinese savoury dish. The wrap gives the classic halwa a nice crunch.

Ingredients Serving: 5

  1. Fresh grated carrots 2 cups
  2. Full fat milk 1/2litre
  3. Cardamom powder 1/2 teaspoon
  4. Sugar 1/4 cup
  5. Saffron 10-12 strands
  6. Ghee 1 tablespoon
  7. Spring roll sheets to wrap
  8. For slurry to bind
  9. All purpose flour 2 tablespoon
  10. Water as required
  11. Oil for deep frying
  12. Honey for glaze/ coating
  13. Slivered almond and pistachios to garnish
  14. Silver leaf to garnish

Instructions

  1. In a non-stick kadhai pour milk and bring it to boil.
  2. Reduce the flame and add grated carrots to it. Stir it well.
  3. Cook on medium heat till it gets reduced to half.
  4. Now add cardamom powder and saffron strands. Mix well.
  5. Let it cook till the milk gets completely evaporated.
  6. Now add in ghee and sugar and cook on high flame , stirring continuously.
  7. Cook for 5 minutes and switch off the flame. Let it cool.
  8. To make the slurry in a mixing bowl put all purpose flour and add water little by little to make a paste of thick consistency.
  9. Now take a spring roll sheet and put 1tbsp of gajar ka halwa on sheet placing it diagonally.
  10. Start folding the sheet and cover the halwa from one corner .
  11. Now apply the thick paste on the adjacent edges of the sheet and pack it tight.
  12. Repeat the process with rest of the sheets and remaining gajar ka halwa.
  13. Pour oil in a deep bottomed kadhai for deep frying and let it get heated.
  14. Deep fry the halwa spring rolls on medium flame till they turn golden.
  15. Remove them on a paper towel.
  16. Now brush them with honey covering all the sides.
  17. Garnish with slivered nuts and edible silver leaf .
