ABOUT Fig almond loaf cake with a caramel glaze RECIPE

Lusciously sweet figs with a slight crunch from almonds make this cake a delightful dessert!

Ingredients Serving: 12

  1. For cake:
  2. All Purpose Flour 3 cups
  3. castor sugar 1 cup
  4. Baking Soda 1 teaspoon
  5. Baking Powder 1 teaspoon
  6. Butter 1/2 cup
  7. Almond extract 1 teaspoon
  8. Milk 11/2 cup
  9. Almonds, chopped (optional, but it adds a great nutty flavour)1/2 cup
  10. Soft dried figs 1/2 cup
  11. Fresh figs chopped 8
  12. Some red globe grapes for garnish (optional)
  13. For Caramel Glaze:
  14. Butter 2 tablespoon
  15. Light brown sugar 2/3 cup
  16. Vanilla essence 1 teaspoon
  17. Milk 1 tablespoon
  18. Pinch of salt

Instructions

  1. For the cake: Preheat the oven to 180 degree centigrade .Grease one loaf and one mini loaf pan and keep aside.
  2. In a large bowl add all dry ingredients and mix well.
  3. To the dry ingredients, add softened butter, almond extract, milk and mix until just combined. Do not over mix.
  4. Add the chopped almonds, chopped dried figs and gently fold them into the batter.
  5. Pour the batter into the pans and bake it for about 45-50 minutes or until done.
  6. Allow the cakes to cool for about 10 minutes in the pans. Then remove from the pans and then let cool completely while you prepare the glaze.
  7. For the glaze: Add all the ingredients to a saucepan over medium heat.
  8. Keep stirring careful not to let it stick or burn. The glaze will start to bubble up. Remove from burner once it has thickened a little, but still seems a little thin to use.
  9. Allow it to cool for a couple of minutes before glazing the cakes.
  10. Decorate the loaves with cut fresh figs and red globe grapes
