ABOUT Duchess Potato Crowns RECIPE

This recipe is adapted from the classic duchess potatoes recipe. The elegance of this dish lies in the swirls and their majestic look. These crowns taste great too! I always endeavour to add nutritive value during cooking. In this dish too, i have not added cream to the potato swirls. The base is of bread. The interesting stuffing adds on to the taste and look.. Generally egg yolks are mixed to the potato piping, but I have kept this dish vegetarian..This is an ideal snack for parties.

Ingredients Serving: 3

  1. FOR POTATO PIPING:
  2. Potatoes 1 large boiled and mashed
  3. Cheddar cheese shredded 2 tablespoons
  4. Salt 1/2 teaspoon or adjust to taste
  5. Black pepper powdee 1/2 teaspoon
  6. Oregano crushed 1/4 teaspoon
  7. Nutmeg powder 1/8 teaspoon
  8. Cinnamon Powder 1/8 teaspoon
  9. For Filling:
  10. Capsicums 1/2 cup finely chopped assorted colours
  11. Mozarella cheese shredded 1/4 cup
  12. Oregano 1/4 teaspoon
  13. FOR DISC/CROWN BAKING :
  14. White Bread slices 6
  15. Butter for greasing
  16. Tomato ketchup
  17. Olive oil

Instructions

  1. Mix potato and all ingredients mentioned under piping. Make a smooth filling
  2. Take a piping bag with star nozzle and put the potato filling in it.
  3. Cut six round discs/ crowns from bread slices with cookie cutter
  4. Mix 1/2 tablespoon of butter with grated cheese.
  5. Spread this butter-cheese mixture on the round slices.
  6. Spread a little of ketchup in the centre of each disc/crown.
  7. Put a teaspoon of a mixture of corn, capsicums and mozarella cheese in the centre of each disc/crown leaving half inch on its outer edge
  8. Sprnkle some oregano on them.
  9. Pipe two swirls of potato filling throughout the edge of the disc/crown.
  10. Put a dash of ketchup in the centre of each crown over the filling.
  11. Place all the discs/crowns on a greased baking tray
  12. Bake in a preheated oven at 180 degrees Celsius for 20 minutes or unti the disc/crown is crisp
  13. Dab the crown tops with a little olive oil
  14. Serve hot with ketchup
