ABOUT Malai malpua RECIPE

Malai malpua is a traditional north Indian sweet of soft, fluffy and yet crisp pancakes coated with sugar syrup and served with rabri or thickened sweetened milk. Diwali festival is around so thought of sharing this malpua recipe. This recipe is indeed a fluffy version of malpua. The inner texture is fluffy and outside edges are crisp. This is an instant version. Well no so instant too as i did keep the batter to rest for some minutes. Ghee is traditional used for frying malpuas and they are also deep fried. I did use ghee for frying. Malpuas have to be served hot or warm. If you serve them at room temperature or chill them, then the malpuas become chewy. But if you like chewy texture, you can serve them chilled.

Ingredients Serving: 6

  1. Maida 1 cup
  2. Sooji rawa 1 tablespoon
  3. Malai 1/2 cup
  4. Milk 1/2 cup
  5. Cardamom powder 1 /2 teaspoon
  6. Chopped almonds for garnish
  7. For chashni..
  8. Sugar 1 cup
  9. Water 1 /2 cup
  10. Safron thread 6
  11. Cardamom powder 1 /2 teaspoon

Instructions

  1. Take a bowl add malai
  2. Add maida
  3. Add cardamom powder
  4. Add sooji rawa
  5. Add milk
  6. Make a smooth paste.
  7. Like idli batter.keep a side.
  8. Take a kadhai add water
  9. Add sugar
  10. Add saffron thread
  11. Boil it.
  12. Make chashni
  13. Like this
  14. Add cardamom powder
  15. Switch off gas
  16. Take a pan add some ghee for shallow fry
  17. Pour this mixture with the help of spoon
  18. Shape them round
  19. After 1 to 2 minutes change the side.
  20. Make all malai malpua.
  21. Remove malpua from kadhai.
  22. Dip these malai malpuas on the chashni for some times.
  23. Soak in syrup.
  24. Garnish with chopped almonds
